Food Storage Recipes: Homemade Applesauce for Canning

If you are lucky enough to have an apple tree (or have a generous family member or friend willing to donate apples), then making your own applesauce can be a big money-saver. In the past I have been able to pick apples from my cousin's tree for free. But when she moved, I still purchased apples to turn into applesauce because the finished product is so much tastier than store-bought products.

Here is a quick and easy tutorial on how to make and can your own applesauce.

Tools Needed
- Large cooking pot
- Handheld mixer (optional)
- Apple peeler (optional)
- Water bath canner and accessories
- 7 quart jars, rings, and new lids
- 20 pounds of apples
- 2 cups sugar

Step 1: Get your pot ready
I used my biggest pot and put a little water in the bottom to keep the apples from sticking. As I peeled the apples I just started throwing them in to start cooking.

Step 2: Peel a TON of apples
I used my handy dandy apple corer/peeler which the kids thought was WAY fun to help with. If you don't have one of these peelers, you can peel them the boring way with a potato peeler. Slice them into relatively small slices to reduce cooking time.

Step 3: Cook up those apples
By the time we were done peeling all the apples the first ones were really well cooked. I just let the whole thing cook for about 10 more minutes to make sure they were all soft.

Step 4: Prepare your canner and jars
While the apples were cooking I ran my bottles in the dishwasher to sterilize them. I also filled up my canner and started to boil the water. Lastly, I started some small pots of water boiling to sterilize my lids.

Step 5: Make the applesauce!
Once the apples were all soft, I used my hand-me-down baymix hand blender to blend the applesauce to a nice consistency. You could also use a food processor or even a blender to do the pureeing. But the baymix was SO easy because I could do it straight in the pot it was cooking in. At this point you can add any seasonings you want. I added 2 cups of sugar and it turned out really sweet and delicious. If you use a sweeter variety of apples you can even use NO sugar for a healthier applesauce. Some people like to add cinnamon or other things but I prefer to just add those when we eat it.

Step 6: Pour the applesauce into jars and seal 'em up
Use a funnel as this can get really messy. I ladled the applesauce in leaving about 1/2 an inch of space at the top of the jars. Then I used my tongs to pull out a lid for each jar. Try not to touch the lids with bare hands as you don't want them to get unsterilized. Screw the ring on tight once the lid is set on top of the jar.

Step 7: Put your jars into your canner and boil
As I filled each jar I would put it into the canner. As you put more jars in the water level rises, so you don't need to start with the canner all the way full. Once I had all 7 jars in I filled up to about an inch over the jars with hot water. You have to wait until the water is boiling before you start timing. Let it boil for 20 minutes and then remove the jars. Way easy huh?

Jicama Adds Crunch, Sweetness and Almost No Calories to Recipes

The food industry, like other American industries, has trends and jicama is one of them. Chefs are using this root vegetable in hot and cold dishes. Food magazines are publishing all sorts of jicama recipes and hundreds more are on the Internet. Why is jicama so popular?

Some food experts think its growing popularity is due to the growing Hispanic population. Another reason may be that chefs are always looking for something new. But health-conscious consumers may be force behind the trend. Jicama is high in fiber and water (it's 90% water) and low in calories. In fact, a cup of jicama contains only 45 calories, according to the USDA.

"Betty Crocker's Southwest Cooking" defines jicama as a root in the turnip family. Though jicama is related to "the sharp tasting turnip," the cook book says, it is "so mild in flavor that, when eaten raw, it is usually sprinkled with lemon or lime juice and chile powder." A few grocery stores carry peeled jicama, but this product is not available nation-wide.

I was in a San Francisco restaurant when I tasted jicama for the first time and it tasted like apple. My salad appetizer -- field greens, cherry tomatoes, red onion, and match-stick slices of jicama -- was dressed with a basic oil and vinegar dressing. The salad was simple, elegant, and unbelievably delicious.

Though it is often called the Mexican potato, jicama does not darken like a potato when peeled. Small jicama are sweeter than large ones. Choose a firm, un-bruised jicama and leave the wizened ones behind. Jicama is hard so be careful when you peel it. Slice it in half first and remove the skin with a vegetable peeler. You may cut the jicama by hand or in a food processor. Sweet and sour come together in my recipe for Jicama-Carrot Salad with Dried Cherries.

INGREDIENTS

1 small jicama

small head of Boston lettuce (also called butter lettuce)

1/2 cup shredded carrots (from bag)

2 scallions (white and green parts), diced with kitchen shears

1/3 cup dried cherries

DRESSING

1 teaspoon Dijon mustard (country style)

2 tablespoons lemon juice (one lemon)

2 tablespoons extra virgin olive oil

1 tablespoon honey

1/8 teaspoon salt-free lemon and pepper seasoning

METHOD

Put salad dressing ingredients in a small jar, shake until combined and set aside. Peel jicama. Cut into match-stick slices or slice with a food processor. Tear lettuce into small pieces and place in a large bowl. Add carrots, scallions, dried cherries, and salad dressing. Toss gently. Makes 4 servings. Note: Lemon juice wilts lettuce quickly so make this salad just before you are going to eat it.

Space Derby - How to Win at a Fun Cub Scout Activity

Last Saturday, my 8 year old son participated in his first Space Derby with his Cub Scout pack. A lot of boys, parents, siblings, and Cub Scout leaders showed up for the event. What is a space derby? Well it is probably a little different than what you imagined.

Each Cub Scout gets a Space Derby kit through their Cub Scout pack. The kit consists of balsa wood that each participant will use to form the body of a rocket. There is also plastic material in the kit that can be cut to fashion fins for the rocket. Here is where it starts to sound a little strange. There is also a propeller in the kit. A propeller?!! I thought this was a rocket? Well, it is supposed to look like a rocket, but the propeller actually propels the rocket. The Cub Scouts race their rockets four at a time. The rockets hang horizontally from a fishing line and the propellers are powered by a rubber band that comes with the kit.

The rockets are judged in three categories; speed, beauty, and originality. It quickly becomes apparent that the primary thing that makes a rocket fast is its' weight. Since all the rockets are powered the same and wound equally, the lighter your rocket, the faster it will go. However, if you make your rocket light, you risk structural failure when the rubber bands are wound. So there is a balancing act to having a light, but strong rocket in order to have a fast one.

My son and I decided to go for the beauty category since this was his first space derby. We wanted to get an idea how the other rockets would perform in terms of speed this time out. We followed the directions in the kit and started by gluing the two balsa wood halves together. Later we used very course sandpaper to begin making the shape of our rocket. I later found out from some of the other parents that a potato peeler works wonders for shaving wood from the body to get the rough form of the rocket. Not having this information to begin with, we used sandpaper. Once we got the basic shape we wanted, we used finer sandpaper. We switched to 400 grit sandpaper, then finally 800.

Next we sprayed the rocket with primer. Once the primer dried thoroughly, we sanded it with the 800 sandpaper. We then added another layer of primer and sanded it again. We continued this process until the rocket body was smooth enough to satisfy us. I have a friend who said I should have used sanding primer. He says it would have filled in the cracks in the balsa wood with only one or two coats. I'll have to take his word for it. I used regular spray paint primer...the cheap stuff.

Once we were finished priming and sanding, we sprayed a coat of candy apple red on the body. When spray painting, there are a few tips that will make a huge difference in how your finished model will look. Spray paint in a well ventilated area only. It is important that you hold the spray can the correct distance from your model...about 6 inches is usually recommended. If you get it too close your paint job will have runs in it; too far away and your paint job will have an orange peel effect (it will look rough and dull). Keep the can moving while spraying... again, too much time spent in one spot will result in runs and a not-so-great paint job.

When spray painting your rocket, you can fashion a fuselage holder from a clothes hanger. This prevents you from getting spray paint all over your hands and from getting finger prints on your fresh paint job. Be sure to have a secure spot where you can place the end of your hanger, keeping your fresh paint from touching anything until it dries. Allow plenty of time for your paint to dry (30 minutes) before adding a second coat or (2 - 4 hours) before touching the rocket body, depending on humidity.

Once the first coat was dry, we added a second coat of candy apple red. We painted the fins and the propeller chrome after priming them. Since we didn't have any decals handy, I used silver and black sharpies to draw lightning bolts on mailing labels. I then cut the lightning bolts out and stuck them on the rocket body. My wife used a fine tip black sharpie to add Capt. Justin Rodgers to one of the rockets' tail fins.

Justin's rocket won first place in the beauty category. He did OK in terms of speed, but we will definitely make a lighter rocket for next year. I hope you found some useful tips in this article for building your own winning space derby rocket.

o Garlic cloves can be rubbed against the face and this can be done many times a day depending on your convenience.

o Make a mixture of avocado and water and wash your face with this mixture to reduce the itchiness.

o Lime water mixed with dry yeast serves as a good face pack for curing pimples. After applying the paste leave it for atleast 15 minutes so that the paste dries up.

o Plain lime juice or apple cider can be applied with the help of a cotton ball. This reduces the stickiness in the skin.

o Make a fine paste of bay leaves with water. Apply this mixture on the face and wash with warm water after 20 minutes.

o Vinegar can also be used for cleaning the oil and dirt in the skin. For people with sensitive skin this may cause irritation and this is suitable for oily skin.

Medicine is in the kitchen

The medicines for preventing the formation of pimples are in your kitchen. You can use the available fruits and vegetables to cure your problems. These natural foods can be consumed or can be applied on the skin for nourishing the skin. When you take fruits and vegetables regularly your skin will become flawless.

o Radish is very good for skin and it is better to eat radish with every meal. You can grate radish and eat it as a raw vegetable for great effects.

o Rosemary tea will maintain the oil levels in your skin and you can drink two cups daily.

o Mixture of lemon juice and honey is very good for clearing the toxins in the body. Take three glasses of this mixture everyday to get a glow in your skin.

o Drinking carrot juice or cucumber juice will serve as a great remedy for curing acne.

o The cucumber juice can be directly applied on the pimples with cotton balls to reduce the itchiness and cucumber acts as a coolant.

o A mixture made of two tablespoons of white sugar and 1 tablespoon of brown sugar with water acts as a scrubber and you can use this paste to remove the dirt in your face.

o Orange peel can be powdered and this powder is mixed with water and applied on face for curing acne. Doctors suggest this peeler for those who are suffering from acne for a long period.

o Cinnamon powder can be mixed with line juice and this effectively cures acne in just two weeks. This mixture can be applied daily and it is very effective.

Tips on How to Get Wax Off Of Apples

Some people think that it might be harmful to consume the artificial wax sprayed onto the apples hence they will try to remove the wax off the apples. There are a few options on how to get wax off the apples.

Wash the apples after wiping and they are safe to be eaten. You can replace the apple cider vinegar with normal white vinegar and apply the similar wiping method. If you wish to use water, you can dip the apples in lukewarm water and gently rub the skins if necessary. Another way is to use mild detergent. Use a brush to clean off the artificial wax. You should mix equal amount of water when using the vinegar or detergent to avoid harmful effects of the mixture. You will know if the method you use is working when the waxing in the liquid is visible.

Besides that, you can also spray the apples. Fill a spray bottle with water or vinegar and spray it onto the apples. Leave them for five minutes and rinse each of them with water thoroughly. If the apples are not cleaned well with water, the taste of the vinegar will linger.

Another recipe on how to get wax off apples is using the baking soda. Get few tablespoons of soda powder and mix it with a bowl of water. Add a tablespoon of lemon juice and mix well. You can wipe the apples with the mixture. If it is not strong enough, you can add more lemon juice.

An additional alternative is to wipe of the wax using vodka. However you will need to wash the apples thoroughly using water after wiping as the vodka may leave a distinct taste on the apples. You can also choose to use the microwave. Set your microwave to defrost mode and leave the apples in the microwave for half a minute. Then clean the apple using a paper towel.

St Patrick's Day Party Food Ideas for Kids

Keep in mind that kids will eat more than just pizza. A lot of children I know love Cesar salad but if you tell them it has anchovies, "fish," in it, forget about it. So always try to embellish or create a new name for a dish. For example broccoli with cheese sauce, try using the name "Lucky the Leprechaun's clover trees with melted gold sauce" or if you are using minced herbs over food for a green color effect, tell your kids it's "Lucky the Leprechaun's magical clover/shamrock flakes. St. Patrick's day party food for kids can be fun to make and to eat.

If you're a little unsure about picky kids always serve one dish you know is a hit. Or serve sauces & dips on the side. Be creative. Think Shamrock green and pot of gold yellow.

Here are a few ideas for St. Patrick's day party food for kids to get you going. Most adults will love these tidbits too.

Use a vegetable peeler to cut lengthwise strips of peel down four sides of large cucumber leaving some visible peel, making a square shape. Cut cucumber into 1 inch chunks. With a melon baler scoop out a hole in the middle of the cucumber to create a bite size bowl. Be sure not to go to deep you want the bottom to stay in tack. Fill with garlic and herb cream cheese, or dill dip.

St. Patty's Vegetable table tray Cut up broccoli, cucumber, celery, green bell peppers, snap peas, and zucchini use ranch or dill dip. For extra color sprinkle minced parsley or dill in and on top of dip.

St. Patrick's fruit tray Use green grapes, sliced green apple, sliced kiwi, balled honeydew melon. Use tooth picks to pick up fruit and dip into vanilla yogurt or key lime pie yogurt.

Clover Dip Use your favorite spinach dip. I like Knorr's vegetable recipe mix. Serve with vegetables, crackers, or French baguette bread slices

Irish Deviled Eggs Hard Boil eggs. Gently crack shells of the eggs, by rolling on a hard surface, but don't remove the shells. Place half of the eggs in 2 cup of hot water, two tablespoons of vinegar and 20 to 40 drops green food coloring. The dye bath should cover the eggs. Let the eggs sit in the dye bath for about 10 minutes. Take out one egg and remove the shell. The white of the egg should now be green and veined with darker green where the dye got through. If not let the eggs stay in the dye bath a little longer. Use your favorite deviled egg recipe. For the other half of the eggs, add chopped green herbs to the egg yolk to turn it green. Or add a few drops of food color to the yolks. I like a simple recipe for deviled eggs just adding mayonnaise and mustard to the yolks.

Use your imagination and your food at your St. Patrick's day party for kids will be a huge success.

Easy Entertaining Memorial Day Menu

Menu: Serves 10-12
Gourmet Hamburger Bar
Tangy Dill Potato Salad
Fruit Salad with Brown Sugar-Lime Dressing
Gran's Blackberry Cobbler with Vanilla Ice Cream

Gourmet Hamburger Bar
Makes 12 hamburgers
12 slices bacon
1 package (12 ounces) sliced white mushrooms
Salt to taste
1 large red onion, sliced about 1/4 inch thick
Olive oil for brushing
2 avocados, peeled, pitted, and sliced
Juice of 1 lemon
4 tomatoes, sliced
12 red leaf lettuce leaves, washed and dried
Sliced sweet and dill pickles
12 slices assorted cheeses (Cheddar, Swiss, jack, pepper jack)
4 pounds lean ground beef, Sirloin-7% fat, or ground turkey or garden burgers
1 1/4 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
Nonstick cooking spray
12 gourmet hamburger buns
Ketchup
Mustard
Mayonnaise

Fry the bacon in a skillet until crisp; drain on paper towels. Sauté the mushrooms for 5 minutes in 1 tablespoon of the leftover bacon grease; salt to taste. You may grill some of the onion slices if desired. Brush with olive oil and grill for 10 to 12 minutes, turning once. Prepare the other accompaniments (avocados, tomatoes, lettuce, pickles, and cheese). When slicing the avocados, sprinkle with the juice of 1 lemon. This will prevent them from turning black.
Mix the ground beef or turkey with the kosher salt and pepper in a large bowl. Shape into 12 patties about 3/4 inch thick. Light a fire in a charcoal grill, or preheat a gas grill to medium. Coat the grill with cooking spray and grill the patties. Turn them once, and do not squish down with the spatula as this will squeeze out all the juice. When cooked to the desired doneness (4 to 5 minutes on each side), put on a serving platter. If making cheeseburgers, put slices of cheese on the burgers and leave on the grill until the cheese is just soft and a little melted, probably no more than 1 minute. Let guests pick their toppings from your gourmet bar.
Tip: Most grocery stores carry a line of gourmet hamburger buns, such as potato, onion, or seven-grain or you can get fresh French or ciabatta rolls from your bakery. For this meal, definitely do not buy the white enriched bargain buns. The idea is gourmet hamburgers!

Tangy Dill Potato Salad
Makes 10 to 12 servings
2 1/2 pounds potatoes (about 8 medium)
2 teaspoons salt for boiling potatoes
4 eggs
3 stalks celery, chopped
1/2 cup chopped onion
1 cup light mayonnaise
1/2 cup light sour cream
2 teaspoons chopped fresh dill (preferably) or dried dill
1 tablespoon rice vinegar
1 tablespoon Dijon mustard
1 1/4 teaspoons salt
1/2 teaspoon freshly ground black pepper

Peel the potatoes with a vegetable peeler and cut into 1-inch chunks. Place in a saucepan, and add water to cover and 2 teaspoons salt. Bring to a boil, cover, set the heat to low, and simmer for 18 to 20 minutes, or until just tender when you stick the potatoes with a fork. Do not overcook. Drain in a colander.
Meanwhile, place the eggs in a saucepan and cover with cold water. Bring to a boil over high heat. Set the heat to low and cover. Simmer for 13 minutes. Drain, put the eggs back in the pan, and cover with cold water. When the eggs are cool, drain. Tap each egg on the counter and roll it between the palms of your hands. Peel off the eggshells. Discard the shells and chop the eggs.
In a large bowl, combine the celery, onion, mayonnaise, sour cream, dill, vinegar, mustard, salt, and pepper. Add the potatoes and eggs. Stir well and refrigerate until ready to serve.
Tip: Never leave potato salad unrefrigerated for very long. The eggs and the mayonnaise can spoil fast at room temperature and even faster if left in the sun.

Fruit Salad with Brown Sugar-Lime Dressing
Makes 10 to 12 servings
1 cantaloupe, cleaned and cut into 1-inch chunks
1 pint strawberries, cleaned and sliced
4 cups cubed seedless watermelon (1-inch chunks)
1 cup red seedless grapes
2 cups cubed fresh pineapple (1-inch chunks)
Brown Sugar-Lime Dressing
2 tablespoons fresh lime juice
1/4 cup light brown sugar
1 cup vanilla low-fat yogurt
Mix the fruit together in a large bowl. Cover and refrigerate.
To make the dressing, mix the lime juice, brown sugar, and yogurt together in a small bowl. Add to the fruit salad right before serving.

Tip: You may also use a melon baller to scoop out small balls of the cantaloupe and watermelon.

Gran's Blackberry Cobbler with Vanilla Ice Cream
Makes 10 to 12 servings
3/4 cup unsalted butter (1 1/2 sticks), cut into 12 pieces
5 cups blackberries, fresh or thawed frozen
2 1/4 cups sugar, divided
2 cups plus 3 tablespoons all-purpose unbleached flour, divided
1 teaspoon salt
4 teaspoons baking powder
2 cups cold water
1/2 gallon vanilla ice cream, purchased or homemade
Preheat the oven to 425 degrees F. Melt the butter in a 9-by-13-inch baking pan in the oven. Meanwhile, in a medium bowl, mix the blackberries, 1/4 cup of the sugar, and 3 tablespoons of the flour, and pour over the melted butter in the pan. In a separate bowl, combine the remaining 2 cups sugar and 2 cups flour with the salt, baking powder, and water, mixing with a whisk until the lumps are gone. Pour this over the blackberry mixture and butter in the pan and bake for 35 to 40 minutes. Serve warm or at room temperature, with vanilla ice cream.
Variation: For peach cobbler, omit the blackberries, 1/4 cup sugar, and 3 tablespoons flour, and add two 16-ounce cans peaches in light syrup. Drain and pour over the butter. Pour the batter over the top and bake.

Traditional Swedish Christmas Drinks Recipe

Here are two examples of how the Swedes have incorporated the enticing flavors of tropical spices. In glögg and non-alcoholic glögg the liquids are steeped with various spices. What better way to keep spirits high when the sun disappears for months? A Christmas gathering with no glögg is unthinkable in Sweden, akin to a Superbowl party with no beer.

Mulled Wine (Glögg)

5 whole white cardamom pods, cracked

2 whole cloves

1 1-inch piece of cinnamon stick

1 teaspoon dried orange peel

2 tablespoons brown sugar

1/3 cup Madeira or port

1 bottle good-quality red wine such as burgundy

Put all of the ingredients in a stainless steel pan and slowly heat. Do not boil. Strain and drink immediately. For more intense flavor, let spices steep for several hours or overnight; strain and gently reheat.

Mulled Fruit Juice (Saft Glögg)

1 orange

1 quart apple cider

2 cups white grape juice, currant juice, or cranberry-raspberry juice

1/4 cup sugar

1 3-inch cinnamon stick

8 whole cloves

2/3 cup raisins

2/3 cup blanched slivered almonds

1. Using a vegetable peeler, cut a single spiral of zest from the orange. Reserve orange for another purpose.

2. In a large pot combine orange peel, apple cider, fruit juice, sugar, cinnamon, and cloves. Let mixture stand 4 hours.

3. Bring to a boil over medium heat then reduce to low. Simmer 30 minutes.

4. Serve hot or cold in punch cups with a few raisins and almonds in each serving.

How to Find Items to Sell on Ebay at Garage Sales

If you haven't tried garage sales for finding merchandise to sell on eBay, maybe you should explore this option. There is a strategy for getting the most out of your garage sale shopping efforts. Here are a few tips to help you maximize your efforts, and minimize your time investment.

1) Plan ahead. Go to craigslist to look for garage sale ads in your area. More and more people are relying on craigslist for free advertising. Garage sales usually start on Fridays, and the posts on craiglist start appearing on Tuesdays. Check daily for new posts, and keep a list of sales in your area. You can also look at your local newspaper's website for garage sale ads. The big neighborhoods will usually advertise there. You can find a lot of items quickly if you go to the neighborhood sales, versus sales scattered around town.

2) Go to sales in the affluent parts of town. First, they will have better items. Second, you have no idea of a person's financial situation and they may be having a garage sale to pay bills.

3) Go early. Most garage sales will start at 8 AM. Arrive early to get the best selection. The earlier in the day you start the better chance you have of finding "good" stuff.

4) Take plenty of cash. You don't want to have to take valuable time convincing the seller to take your check. Most people have a garage sale for one reason - to make money. They don't want checks - they want cold, hard, cash.

5) Be prepared. Wear comfortable walking shoes. Take bottled water. Keep snacks in the car. Bring your cell phone in case you find something you are unsure about, you can call your spouse or a friend for their opinion.

6) Don't be afraid to bargain or make offers. People have garage sales to get rid of stuff. They don't want to have to haul it all back in the house at the end of the day. Make reasonable offers and be fair.

7) Use the "cash in hand" technique. I do this all the time. Say for example I find something for , and think it is overpriced. I inconspicuously take a bill out of my pocket and walk up to the seller. Then, with the bill in plain view, I say, "Hi, I am interested in that item over there. I only have left, would you take that?" Seeing the cash, the seller usually takes it. The idea is to be reasonable. The later in the day that you use this technique, the better it works.

I have some interesting stories about garage sales. I went to a huge neighborhood sale in my community last fall. The woman had all kinds of men's items - really nice clothing, shoes, golf equipment, sporting goods, and "guy stuff." I found a really nice pair of Justin lizard skin boots, barely worn, for . (These boots retail for about 0.) That was an amazing find. So, I went to pay for the item, and the woman started telling me how she and her husband had a fight and he left town on a hunting trip for a week. She was having a garage sale and getting rid of all his stuff that she didn't like. I asked, "He isn't going to track me down and get me, is he?" She just laughed, and said, "Probably not. I might sell his car, too." Those boots ended up selling for and were shipped to Germany. You might be wondering what to look for at garage sales.

Garnishing Drinks

Cocktails should not only taste good, they should also do something for the eye, because it is a well-known fact that the eye drinks with you. Give your imagination and creativity free reign when you get to I the final step of cocktail making--garnishing. There are very few drinks for which a garnish is superfluous or even frowned upon. There are the classics whose garnishes have been! predetermined by generations of bartenders, such as the olive in a Dry Martini, the cherry in a Manhattan, the pearl onions in a Gibson the mint for juleps, and cucumber peel for Pimm's. For all exotic and tropical drinks, and especially for fancy drinks, you can do whatever your heart desires as far as garnishing is concerned, I but you should bear a few rules in mind.

o Only use ingredients for the garnish that are suitable for the drink in terms of both taste and color.

o The garnish is supposed to decorate the drink, not adulterate it, overload it, or even push it into the background. Less is often more. Generally, just a slice of orange perched on the rim of the glass, a wedge of lime, a spiral of lemon peel, a maraschino cherry, or a sprig of mint is enough.

o If you use fresh fruit, make sure that it is ripe and blemish free and that you slice it carefully. Twists of citrus-fruit peel are best cut with a potato peeler or with a citrus zester, which is what professionals use. When choosing fruit, there is no limit to what you can use, provided it is edible. Small fruit is very suitable, as well as pieces of fruit, such as baby apples or pears (canned), banana slices, black currants, Cape gooseberries, grapes, kumquats, lychees, maraschino cherries, melon balls, and raspberries.

o Cherries give you great scope because you can choose between red or green maraschino cherries, which are both readily available from supermarkets. In specialist stores, you might even find golden, orange, and black cherries, as well as sour-tasting Amarena cherries which are preserved in a rum syrup. If you want to use fresh cherries, choose pairs of cherries on the stem, if possible. Pieces or slices of apricots, citrus fruits, figs, kiwi fruit, peaches, pineapple, and star fruit, as well as wedges of mandarin and lime, are also very attractive. Black and green grapes are extremely decorative.

Strawberries and raspberries look great, too, if they are drizzled with lemon juice and then dipped in sugar; they look as though they are hosted. Fruit can also be dusted with confectioners' sugar for an attractive finish. Slices of apple and pear, on the other hand, are not very suitable for garnishing because they turn brown quickly. If you want to use them, however, drizzle them with lemon juice to delay discoloration.

Vegetable garnishes are suitable for savory mixed drinks and include fiery sticks, cucumber peel or slices, green olives, pearl onions, and cherry tomatoes. Thin slices of pepperoni also make an interesting garnish for robustly flavored, spicy drinks.

Fresh herbs also provide variety in or on the glass. For example, fresh basil goes very well with mixed drinks including tomato or vegetable juice , lemon balm goes well whenever lemon juice is used; and mint leaves are "the icing on the cake" for drinks based on peppermint liqueur or syrup. A touch of green can be added with pineapple leaves, which are speared on toothpicks or kabob sticks and fanned out, but, of course, you can not eat them.

There are various ways to practice the art of garnishing. Make a single Incision in whole fruit or pieces of fruit from the middle to the edge and perch them on the rim of the glass. Other pieces of fruit can then be secured to this with a toothpick. You can put fruit kabobs in the glass or rest them across the rim of the glass. The following are a few suggestions for attractive fruit kabobs.

Pineapple kabob

Cut a slice of pineapple into 8 pieces and cut out the heart. Spear a few pineapple leaves on a large skewer. Alternately skewer pineapple pieces, black grapes, and red maraschino cherries onto the skewer.

Mar fruit-kiwi fruit kabob

Spear 1 strawberry with a stem, 1 slice of peeled kiwi fruit, a slice one star fruit, and a sprig of lemon balm leaf on a large toothpick or kabob skewer.

How to Make a Traditional Puerto Rican Thanksgiving Day Dinner

Even though Thanksgiving was not always a traditional holiday on the island, many Puerto Rican families calling the States home began celebrating it by adding a touch of Sabor Latino. A traditional Puerto Rican Thanksgiving menu will likely consist of Pavochon, Mofongo stuffing, Arroz con Gandules (rice with pigeon peas), Tostones, and Tembleque or dulce de leche. I serve a green bean casserole with my meal and for an appetizer I fry up some Platanos versus the Tostones. I season mine with garlic, black pepper and salt and serve them with Mojo Criollo.

I'm usually cooking enough food to feed at least five Marines so I get a 12-15 lb turkey and call it a day. My mom always taught me to begin prepping my turkey the day before Thanksgiving so my seasonings have time to soak into that bird.

Two Days or One Day Before:
To thaw your bird slow you can stick it in the refrigerator two days before or for fast thawing submerge it in it's wrapping (DO NOT take wrapping off) in your tub or a deep sink in cold water. Make sure the entire bird is submerged. The bigger the bird the longer it'll take to thaw. A big turkey like the ones I cook usually take 2 days to thaw out in the refrigerator.

The Day Before:
Season your bird with Adobo, inside and out. Be generous. Your guests will appreciate it. No one wants a bland turkey. Gather your black pepper, garlic salt, oregano and paprika and rub them all over the bird. Poke holes in your bird with a fork so that the seasonings will soak into its skin. Set the bird back in the fridge.

THANKSGIVING MORNING:
I usually begin cooking my bird around 4 a.m., which only leaves me room to do other things like pull out my tree and decorations and set up other dishes. Begin by preparing your mofongo stuffing.

Mofongo Stuffing.
You'll need:
6 large green plantanos,
1/3 C of chicken broth
4 tsp. chopped garlic
1 lb bacon chopped into small pieces and cooked. Throw away fat.
3 sweet chili peppers, chopped
1/4 cup olive oil

Mix bacon, garlic, peppers, and olive oil. Mash the platanos and olive oil mixture in your pilon. Repeat until all ingredients are gone. Mix mofongo and broth and if mofongo isn't moist enough, add more broth. Stuff the bird with the mofongo and cook. and follow instructions that came with your bird.

NOW FOR THE BIRD:

Heat your oven to 375º.

Rinse your turkey well. Rinse the inside once you remove the bag from the turkey's cavity. Be sure to pull out the bag from your turkey BEFORE you begin cooking it!!! Muy Importante!

Put the bird in a deep and sturdy aluminum or tin foiled roaster. LINE it with aluminum foil first.
Place chunks of butter on top of and all around the turkey. Place an entire stick of butter inside of the turkey's cavity. Be generous. You'll have a juicy turkey in the end.

Now begin stuffing your turkey with the mofongo. If you're a newbie cook, forget the mofongo and just whip out the Stove Top Stuffing and follow directions on the box. It's okay. We're all beginners at one time.

Cover the turkey with aluminum foil and put it in the oven.

TURKEY SIZE & COOKING TIME:

4 to 6 pound turkey = 3 to 3 ¾ hours.

6 to 8 pound turkey = 3 ¾ to 4 ½ hours.

8 to 12 pound turkey = 4 to 5 hours.

12 pound and beyond = 5½ to 6 hours.

Always be sure to read the side of the turkey wrapping for exact cooking time. Better to be safe than undercooked. Yuck! About 45 minutes before your bird is done, remove the foil on top and continue to cook uncovered until the bird is crispy on top.

12 Lb. turkey
Lots of Adobo
Paprika
2 tsp. of Black pepper
4 cloves of garlic (mash in a pilón)
2 tsp. of oregano (Leaf)
4 sticks of Butter

To begin preparing your Arroz con Gandules:

YOU'LL NEED:
2 packs of Sazón
3 cans of Gandules
6 cups of water
4 cups of rice
2 cups chopped bacon, cooked
2 cups of Sofrito
2 Tablespoon of Goya Olive oil

Heat olive oil in a large caldero or pot.
Drain and rinse the cans of Gandules
Sauté the sofrito and chopped ham for about a minute and a half
Add rice, water, gandules and Sazón
Once it begins to boil, let it continue for about 3 minutes
Cover the pot tight and reduce the heat to medium-low. Let it cook for 35 to 40 minutes.

***DO NOT use a lid with those vent holes and DO NOT lift the lid to check the rice!
When it's done stir the rice once or twice before serving and serve HOT.

PREPARING YOUR GREEN BEAN CASSEROLE:

2 pound green beans, washed and trimmed
2 cloves garlic, cut in half
3 tablespoon chopped onion
1 1/2 teaspoons salt
1 tablespoons olive oil
½ packet of Sazón and ham seasoning
1 tablespoon butter
1/8 teaspoon pepper
1/4 cup boiling water

Slice green beans in halves. Heat oil and butter in a skillet. Add Sazón and ham seasoning then sauté both with onion and garlic until soft. Remove garlic then add green beans, salt, pepper, and boiling water. Cover and cook for 25 minutes over medium heat until tender. You can add a little more water, if needed.

MAKING FRIED PLATANOS (Amarillo's):
I like to wait until my platanos are yellow with a few black spots. To me, they taste better...sweeter. No Puerto Rican dish (to me) is complete without rice, gandules, habichuelas and platanos! To begin preparing the platanos. Use 4 platanos to make enough to serve several people and get a bottle of mojo criolla for sauce.

Cut off about one inch from each end of the platano using a sharp knife.

Slice them down the middle then horizontal to fry them like chips except make them a little bit thicker.

Place the sliced pieces in very hot water and let soak a few minutes.
Take your knife and place it under the skin of the sliced piece and begin removing the skin. Kind of like you're peeling the skin off of a potato. Sometimes I just use a potato peeler.

Drain them on a paper towel then sprinkle the slices with black pepper, a dash of salt or garlic then fry each slice in the mixture of olive & vegetable oil over medium heat until tender and golden brown. Turn them one time only.

And for the coupe de gras: DESSERT
We have Tembleque! This is a traditional Puerto Rican dessert for the holidays.

YOU'LL NEED:
4 cups coconut milk and ground cinnamon
½ cup of cornstarch and ½ tsp. salt
2/3 cup of sugar
A medium sauce pan, serving dish and square pan.

Dissolve cornstarch in a saucepan with 1/4 cup of the coconut milk. Once it's dissolved add the rest of the coconut milk followed by the sugar, and salt. Cook at med-high heat and stir continuously!
As the mixture gets thick, lower heat until it boils. Immediately pour into your pan. Let it cool then cover and place in fridge for at least 2 hours. Carefully separate the tembleque from the mold using a knife. Turn it over unto a serving dish then sprinkle with the cinnamon. I serve this with café con leche or the men usually just want another beer.
VOILA! You have just made your first Puerto Rican Thanksgiving meal! Enjoy!

Now if you dare...go a step further and add Coquito to the menu. This is a Puerto Rican favorite mostly popular during Christmas and New Years. Nobody makes Coquito like my Abuela!

YOU'LL NEED:
40 ounces coconut milk
14 ounces evaporated (condensed) milk
1½ cup water
½ tsp. cinnamon
2 cup Bacardi rum
Salt to taste
Mix all ingredients in a blender. Taste and add more rum if you like it stronger. You need to add the water because it will get thick once you refrigerate it. Pour into a bottle and refrigerate well. Collect pint size bottles to pour Coquito in for guests to take home as a party favor.
